This Asian influenced wrap is an easy, delicious way to pack for lunch. Try adding sliced mushrooms, shredded carrot or chopped pepper for more veggies! This recipe makes two wraps.
Tortillas:
1-1/2 cups Coleslaw Mix
1 cup Chopped Cooked Chicken
1/4 cup Chopped Green Onion
1 tbsp. Sesame Seeds
4 Green Leaf Lettuce (centre ribs removed)
2 Whole-Wheat Flour Tortillas
Dressing:
1 tbsp Rice Vinegar
1 tbsp Liquid Honey
2 tsp Olive Oil
2 tsp Low-Sodium Soy Sauce
A pinch of Cayenne Pepper
Directions:
Combine the first four ingredients in a bowl
Combine all five of the dressing ingredients in a small measuring cup and drizzle over the coleslaw mixture. Combine well.
Place lettuce on each of the tortillas. Put coleslaw mixture over lettuce down the centre of the tortilla. Fold up bottom ends of the tortillas over top of the filling. Fold in the sides, leaving the tops open.
