This Valentine’s Day, we’re sharing healthy, delicious recipes to fuel your body while still satisfying your cravings! Because at OPEX, we believe in balance—treating yourself while nourishing your body with great food.

Whether you’re looking for a chocolate fix or a protein-packed snack, we’ve got you covered! Try these two simple recipes that fit right into your lifestyle.

Protein-Packed 3-Ingredient Bagels 🥯

You may have seen the protein bagel trend online, and today we’re sharing an easy recipe so you can try it yourself! These bagels are soft, chewy, and packed with protein—perfect for breakfast or a pre/post-workout snack.

Ingredients:

✔️ 1 cup all-purpose flour

✔️ 2 teaspoons baking powder

✔️ ¾ teaspoon salt

✔️ 1 cup Greek yogurt (full-fat or non-fat both work!)

✔️ 1 egg, beaten (for egg wash)

Instructions:

1️⃣ Preheat oven to 375°F and prepare a baking sheet

2️⃣ In a medium bowl, mix together flour, baking powder, and salt. Add Greek yogurt and stir until dough forms (it will look crumbly).

3️⃣ Lightly dust a wooden board or countertop with flour, then knead the dough a few times until it’s tacky but not sticky.

4️⃣ Divide dough into 4 equal portions. Roll each into a ¾-inch thick rope and join the ends to form a bagel shape.

5️⃣ Brush with egg wash and sprinkle with your favourite toppings (think everything bagel seasoning, sesame seeds, or cinnamon sugar!)

6️⃣ Bake on the top rack for 20-25 minutes. Let cool for at least 15 minutes before slicing.

Chocolate Zucchini Muffins – A Healthier Sweet Treat 🍫

A little chocolate, a little nutrition, and a whole lot of deliciousness! These Chocolate Zucchini Muffins are the perfect way to treat yourself while sneaking in some extra nutrients.

Ingredients:

✔️ 1 cup flour (whole wheat or all-purpose)

✔️ ½ cup cocoa powder

✔️ ½ cup sugar (or coconut sugar)

✔️ ½ teaspoon cinnamon

✔️ 1 teaspoon baking powder

✔️ ½ teaspoon baking soda

✔️ ¼ teaspoon salt

✔️ 1 cup grated zucchini (squeezed to remove excess moisture)

✔️ ½ cup milk

✔️ 2 eggs

✔️ ¼ cup melted butter

✔️ 1 teaspoon vanilla extract

✔️ ½ cup chocolate chips (or blueberries for a lighter option)

Instructions:

1️⃣ Preheat oven to 375°F and coat a muffin pan with nonstick spray.

2️⃣ In a bowl, whisk together flour, cocoa powder, sugar, cinnamon, baking powder, baking soda, and salt.

3️⃣ Grate the zucchini and squeeze out excess moisture (a clean kitchen towel works great!). Measure out 1 cup after squeezing.

4️⃣ In another bowl, whisk together zucchini, milk, eggs, melted butter, and vanilla.

5️⃣ Gently stir in the dry ingredients until just combined, then fold in chocolate chips (or blueberries).

6️⃣ Divide batter evenly into the muffin pan, filling each cup ¾ full.

7️⃣ Bake for 16-18 minutes, or until a toothpick inserted in the center comes out clean.

8️⃣ Let cool, then enjoy!
